Chocolate Chip Plantain Bread

I love making fruit bread. Whenever I notice fruit starting to go bad, I’ll find a way to turn it into a soft loaf instead of letting it go to waste. Overripe fruit adds natural sweetness, so there’s no need to load the recipe with sugar.

Recently, I had some leftover plantains and thought, why not make plantain bread the same way I make banana bread? Since plantains are denser than bananas, I let them get very dark brown to ensure the bread would turn out moist and flavorful. I also added a bit of sour cream to keep the texture soft and prevent it from becoming crumbly. This plantain bread turned out so delicious. It is sweet and moist with a crunchy outer layer yet soft middle.

  • 1/2 cup of Light brown sugar

  • 1/2 cup of white granulated sugar

  • 1 & 1/4 cup of all purpose flour

  • 1/8 cup of four cream*

  • 6 tbsp of Butter*

  • Two room temperature eggs

  • One ripe plantain

  • 1/3 cup to 1/2 cup of chocolate chips (depending on preferance)

  • 1 tsp of baking soda

  • 1/2 tsp of salt

*If you choose to opt out of sour cream, use 8 tbsp of butter instead*

Prep time: 5 mins Cook time: 50 mins Total time: 55 mins Servings: 6-10

  1. In a medium sized bowl, mash plantain with fork.

  2. Add eggs and beat in bowl.

  3. Mix in softened butter and sour cream.

  4. Once all wet ingredients have been mixed, slowly add dry ingredients (I start with flour) and mix.

  5. Fold in half of the chocolate chips.

  6. Pour in a greased loaf pan and sprinkle left over chocolate chips on top

  7. Bake at 350 for 45-50 minutes or until knife comes out clean when bread is poked in the center.

Steps 1-4: If you choose to opt out of sour cream, add 8 tbsp of butter instead of 6.

Step 4: Slowly add dry ingredients and mix in between to prevent clumping.

Steps 5-8: You can fold chocolate chips in the bowl or in the loaf pan. Just make sure to not scrape the edges of the pan if you fold the chocolate chips in the pan. Baking times may vary depending on your oven so prior to taking the plantain bread out, poke with knife. Plantain bread is ready when knife comes out clean.
