Appetizer Guacamole for Two

Guacamole is a versatile dish that can be eaten as a dip with chips or as a topping with other savory meals. Saylor and I love Hispanic cuisine and guacamole is a staple in our floating home. I personally like my guacamole a little chunky. Not only is it easier to prep but I like the crunchiness of the onions when they are minced and not blended into a puree. One thing we have had difficulty with while living aboard is keeping herbs fresh. Even when refrigerated, cilantro has a life of 5 days at most. We found cilantro paste and have been substituting it in most of our meals over fresh cilantro. The taste is still pretty strong and delicious so I personally prefer it over dry cilantro. However, whenever possible, we opt for fresh ingredients. But if you are sailing for the long haul, the cilantro paste has a long shelf life after opening making it a great substitute!

  1. A quarter of red onion

  2. Handful of cherry tomatoes (any tomatoes will do but cherry tomatoes are sweeter)

  3. 1 tbsp Lime juice or 1 fresh lime

  4. 1 clove of garlic or 1 tsp of minced garlic

  5. 2 tsp of cilantro paste

  6. 1 tsp salt

  7. Half of an avocado

  1. Cube the red onion and tomatoes.

  2. Puree the avocado with a fork for a chunkier texture. For a smoother texture, you can use a molcajete.

  3. Mix all ingredients in a small bowl and blend. Careful not to overmix.

  4. Add more lime juice or salt per your preference.

  5. Eat within two hours as avocado oxidizes and browns quickly.

  6. Serve with crunchy chips and enjoy :)
